1) Pat chicken dry and season with salt and pepper.
2) Heat oil in a large skillet over medium-high heat. Add chicken and cook, stirring occasionally, until browned and cooked through, 6-8 minutes.
3) Whisk honey, sriracha, and soy sauce in a small bowl.
4) Reduce heat to medium-low, pour the sauce into the skillet, and toss to coat.
5) Simmer 2-3 minutes until the sauce thickens and clings to the chicken.
6) Transfer to a platter and finish with sesame seeds and green onions.
