Directions

1. Bake potatoes at 400 °F for 1 hour until tender. Cool slightly; halve and scoop to ¼‑inch shell.

2. Brush skins with olive oil, season, and bake cut‑side down 10 minutes, flip and bake 10 minutes more.

3. Fill with pulled pork and cheddar; bake 5 minutes to melt. Top with sour cream and chives.
