Directions

1. Preheat oven to 375 °F. Nestle pepper halves in a baking dish.

2. Combine corn, beans, mayo, lime juice, chili powder, cotija, cilantro, salt, and pepper.

3. Fill peppers, cover with foil, and bake 25 minutes. Uncover, broil 2 minutes for char. Garnish with cilantro and serve.
