1. Add chicken, sausage, onion, bell pepper, celery, garlic, Cajun seasoning, smoked paprika, tomatoes, and broth to the slow cooker. Stir well.
2. Cook on LOW 4 hours (or HIGH 2). Stir in the rinsed rice, making sure it’s submerged.
3. Cook on HIGH 1–1½ hours more until rice is tender and liquid is absorbed. (Every slow cooker varies—check at 60 minutes and add a splash of broth if needed.)
4. Fluff, season to taste, and finish with green onions and a few dashes of hot sauce.
