1. Season pork with salt and pepper. Place onion and apple slices in the slow cooker; set pork on top.
2. Whisk maple syrup, Dijon, vinegar, broth, and thyme. Pour over pork.
3. Cook on LOW 6–7 hours (or HIGH 3–4) until fork-tender. Shred or slice.
4. Toss meat with some of the sauce and serve with extra apples and onions. Excellent with mashed potatoes or proasted veggies.
